Avocado, Egg & Smoked Mackerel Toast

Serves 4


Ingredients

  • 1-2 packages of Chatham Harvesters smoked mackerel

  • 4 fried eggs

  • 1 ripe avocado

  • 1/4 cup of washed raw spinach

  • 4 slices of multi-grain bread

  • 1 tbsp of sweet hot mustard

  • Pinch of salt & pepper


Directions

  • Toast 4 slices of multi-grain bread

  • Spread 1/4 tbsp of mustard on each slice

  • Spread 1/4 of the avocado on each slice

  • Divide up the filets of smoked fish, and place pieces on each toast

  • Place a fried egg on top

  • Divide 1/4 of the spinach on each toast

  • Salt & Pepper to taste

  • Serve immediately
