Avocado, Egg & Smoked Mackerel Toast
Serves 4
Ingredients

1-2 packages of Chatham Harvesters smoked mackerel
4 fried eggs
1 ripe avocado
1/4 cup of washed raw spinach
4 slices of multi-grain bread
1 tbsp of sweet hot mustard
Pinch of salt & pepper
Directions
Toast 4 slices of multi-grain bread
Spread 1/4 tbsp of mustard on each slice
Spread 1/4 of the avocado on each slice
Divide up the filets of smoked fish, and place pieces on each toast
Place a fried egg on top
Divide 1/4 of the spinach on each toast
Salt & Pepper to taste
Serve immediately
