Caught fresh from the waters of Nantucket Sound by Chatham Harvesters Cooperative members Captain Jason Amaru and his son Christian aboard the F/V Joanne A3, this local favorite is a summer staple.
Summer flounder; also known as fluke, is a delicate, white, flaky fish with a mild, sweet flavor, perfect for quick and delicious weeknight meals. Try it baked in a white wine and butter sauce, topped with a light sprinkle of breadcrumbs. Add a side of garden vegetables, and you’ve got a fresh, flavorful dinner on the table in no time.

BAKED SUMMER FLOUNDER
Ingredients
Cooking spray
1 lb Chatham Harvesters Summer Flounder, thaw if frozen
Salt and ground black pepper to taste
4 tablespoons butter, melted
3 tablespoons white wine
3 tablespoons seasoned bread crumbs
DirectionsÂ
Preheat the oven to 350°FÂ
Spray coat a 12 by 9-inch baking dish with oil
Melt butter, add wine, and whisk together.
Rinse, pat dry, and season flounder fillets with salt and pepper
Place the fish in a baking dish
Pour a butter and wine mixture over them, then sprinkle with bread crumbs. ​
Bake for 15 minutes until the fish flakes easily with a fork. ​
