Mackerel is a versatile fish that pairs well with a variety of seasonings, especially citrus, herbs, garlic, and bold marinades, which can balance its richness and enhance its natural flavors. In this recipe, we marinaded the fish in citrus, honey, and herbs to compliment the rich savoriness of the fish.
RECIPE
Ingredients
4 Chatham Harvesters frozen mackerel filets - about a pound.
1/8 cup olive oil
1/8 cup lemon juice
1/8 cup orange juice
1 tablespoon honey
2 cloves garlic, minced
1 teaspoon fresh thyme leaves
1 teaspoon fresh parsley, chopped
1/8 teaspoon each salt and pepper to taste
Lemon wedges for serving
Directions
Thaw the fish in the refrigerator overnight or under running water for 15-20 minutes.
In a bowl, whisk together olive oil, lemon juice, orange juice, honey, garlic, thyme, and parsley.
Add salt and pepper to the marinade.
Place the mackerel filets in a shallow dish and pour the marinade over the fish, making sure each piece is coated.
Cover and refrigerate for at least 30 minutes to let the flavors meld.
Remove the mackerel from the marinade and let the excess marinade drip off.
Coat the bottom of a skillet with 1 tablespoon of olive oil or butter
Place the filets in the skillet, skin-side down, and cook over medium-high heat for about 2-3 minutes.
Carefully flip the filets and cook for an additional 2-3 minutes until cooked through. Fish should have an internal temperature of 145 degrees
Remove from the pan, including the crispy skin from the skillet, and serve hot with lemon wedges and your choice of side.
