Black Sea Bass with Cranberry and Pear Wine Sauce


This recipe was created after family day of fishing for Black Sea Bass and cooking the catch for dinner. The sauce is the creation of one young family member who has a passion for cooking.




Ingredients

For the Fish:

1 pound Black Sea Bass

3 tablespoons butter

1 tablespoon olive oil

1/2 cup breadcrumbs

1/2 cup flour

1/2 cup cornmeal

Salt and pepper to taste


For the Sauce:

1/2 cup white wine

1 clove garlic, minced

1 tablespoon butter

Juice of 1/2 lemon


Instructions


Prepare the Fish:


In a large bowl, combine the breadcrumbs, flour, cornmeal, salt, and pepper.

Rinse the fish and pat it dry. Sprinkle with salt and pepper.

Dredge the fish in the dry mixture, shaking off any excess.

In a heavy pan over medium-high heat, melt the butter and heat the olive oil.

Once the butter is melted, place the fish in the pan and fry for 3-4 minutes on each side until golden brown. Remove the fish and set aside.


Prepare the Sauce:

Lower the heat to medium/ medium low and add the remaining tablespoon of butter to the pan.

Add the minced garlic and sauté until fragrant.

Pour in the white wine and stir in the balsamic vinaigrette and lemon juice.

Continue to stir the sauce until it thickens slightly.

Return the fish to the pan for about a minute or two to absorb some of the sauce.


Serve:

Transfer the fish to a platter, pour the sauce over the top, and serve immediately.
